Summary:

This position supports all Food & Beverage service functions, assisting in oversight of daily operations. Ensures efficient meal service and maintains high hygiene standards. Depending on location, this position may hold supervisory responsibilities, or strongly support the Food & Beverage Manager.

Note: Effective 1 December 2024, Dining Hall Foreperson I residing in Trident housing will be subject to a co-pay of $15 per day for room and board, for each day that at least 8 hours of work is offered.

  • Maintains proper food safety procedures (temperature checks , food storage techniques, safe food handling practices; ) and training of staff in proper procedures.
  • Maintains all standards per DEC, OSHA regulations.
  • Leads the food & beverage staff, trains and communicates safety and cleanliness standards, trains staff in food preparation.
  • Assists in guiding the staff in the preparation of all meals; breakfast, lunch and dinner, midnight meal. while and maintaining consistent food standards and menus.
  • Prepares and oversees the preparation of foodstuffs in quantities according to menu plan and number of persons to be served.
  • Oversees or assists the staff in the serving of meals and portion control.
  • Places weekly food & supply orders; oversee reconciliation of food orders, ensures food items are stored properly and all food safety handling standards are met; resolves discrepancies on food orders with supplier and purchasing, partners with Quality Control personnel on audits and resolution of issues (kitchen equipment issues), liaisons with other departments on an on going basis to ensure efficient and complete operation of food services.
  • Partners with operations leadership to coordinate the Food & Beverage staff according to operational variances - i.e. staffing changes, production changes.
  • Directs activities of one or more workers who assist in preparing and serving meals.
  • May also perform routine and deep cleaning of the kitchen.

Minimum Requirements

Required Qualifications (education, years of experience, KSAs)

  • Must be a current Trident Seafoods employee or have worked for Trident Seafoods before
  • High school diploma or equivalent.
  • Basic knowledge of food safety regulations.
  • Must have current Certified Food Protection manager card.
  • Has worked in a Lead III position at Trident location in the past year
  • Knowledge of the structure and content of the English language including the meaning and spelling of words, rules of composition, and grammar.

Preferred education and experience

  • Bilingual preferred.

Work environment (includes travel/on-call):

  • Lift and carry up to 25 pounds.
  • Basic agility for swift movement in the kitchen.
