Job Title: Dishwasher/Sanitation Specialist

Core Responsibilities:
  • Ensuring Dishes are Properly Cleaned & Handled in a Timely Manner:
    • Efficient Dishwashing:
      • This involves mastering the use of dishwashing equipment, including industrial dishwashers, and understanding the proper techniques for handwashing delicate items.
      • Maintaining a consistent flow of clean dishes, glassware, and utensils to support the kitchen and service staff.
      • Sorting and pre-rinsing dishes to remove food debris, ensuring efficient cleaning.
      • Handling dishes with care to prevent breakage and chipping.
    • Timely Execution:
      • Working quickly and efficiently to keep up with the demands of a busy kitchen.
      • Prioritizing tasks to ensure that essential items are cleaned and returned to service promptly.
      • Understanding the urgency of providing clean dishes during peak service hours.
  • Restocking Dish Detergents/Sanitizers & Notifying Direct Supervisor When Specific Items are Running Low or are Out of Stock:
    • Inventory Management:
      • Monitoring the levels of cleaning supplies, including detergents, sanitizers, and cleaning solutions.
      • Proactively restocking supplies to prevent disruptions in the cleaning process.
      • Accurately reporting low or out-of-stock items to the supervisor to ensure timely replenishment.
    • Proactive Communication:
      • Maintaining open communication with the supervisor and other kitchen staff.
      • Providing timely and accurate information about supply needs.
  • Testing Quat Levels to Ensure the Kitchen Can Be Cleaned Properly:
    • Sanitation Compliance:
      • Understanding the importance of proper sanitization in preventing foodborne illnesses.
      • Accurately testing the concentration of quaternary ammonium (quat) sanitizing solutions using test strips or other appropriate methods.
      • Ensuring that quat levels meet the required standards to effectively sanitize surfaces and equipment.
      • Documenting quat level readings and reporting any discrepancies to the supervisor.
    • Safety Awareness:
      • Understanding the safe handling of cleaning chemicals.
      • Adhering to safety protocols and wearing appropriate personal protective equipment (PPE).
  • Ensuring that the Restaurants core values & goals are of the most importance:
    • Contribution to Overall Success:
      • Recognizing that a clean and sanitary environment is essential for providing a positive dining experience.
      • Understanding how their role contributes to the restaurant's reputation and customer satisfaction.
      • Upholding the restaurants standerds of cleanliness.

  • Keeping Workstation & Tools Clean & Organized:
    • Workplace Organization:
      • Maintaining a clean and organized dishwashing area.
      • Properly storing cleaning supplies and equipment.
      • Keeping floors and surfaces free of spills and debris.
    • Equipment Maintenance:
      • Cleaning and maintaining dishwashing equipment to ensure optimal performance.
      • Reporting any equipment malfunctions to the supervisor.
