Position Title: Bread Divider Operator

Wage: $19.55/Hour

Shift: 2nd Shit, 3rd Shift

Hours: 2:00 PM - 10:00 PM, 10:00 PM - 6:00 AM Sunday - Thursday

Bread Divider Operator Responsibilities:

- Adjust pan guide to the size of pan you are going to be running

- Adjust molding table guide for the sizes of loaves you are going to be running

- Adjust guides that guide the loaves into the sheeter

- Adjust the table speeds for the sheeter and molder tables. Only necessary to adjust if you are going to be running cinnamon raisin bread

- Adjust the height of the sheeter and molder to accommodate the height of the loaves that you will be running

- Adjust the speed of the divider and the up feed conveyor. Refer to chart found on divider table

- Adjust weights on the divider to spec for the product you are running. Refer to chart found in binder on the divider table

- Scrap the top hopper in between each different type of bread

- Spray the trough lift with divider oil

- Spray the hopper using the oiler on the divider by pushing the green oil button twice

- Lift trough up and dump it into the hopper

- Record temp of dough on your divider log that the mixer has given up

- Turn the divider on

- Purge the first 6 loaves, or until you have no trace dough left from previous dough

- Check to ensure the weights of the dough chunks are in the range necessary according to the weight chart. Make adjustments up or down depending on what is needed. (Record on divider sheet continue to check weights every couple of minutes)

- Turn all flour sifters on: one sifter is located on the north side of the upfeed conveyor, another is on the Southside of the upfeed conveyor, one on up feed belt, another one is on the molding table

- When the bread exits the upfeed conveyor and enters the sheeter you need to adjust the thickness of the dough piece, Goal is to run as thin a dough piece as possible without tearing

- Adjust the molding table so that the dough piece is shaped slightly as a "dumb bell" Also seam of the dough piece should be done towards bottom of the pan

- Adjust the guide rails to accommodate the dough pieces length. Goal is to have the dough piece fill the entire length of the pan

- Adjust the pan indexer so that the dough piece falls into the middle of the bread pan

- When a full rack has been panned you then need to pull that rack into the proof box. The first rack goes into door # 1 and then each rack after is put into the next door to the left. This continues until all four doors are filled. Then you repeat starting with door #1 and so on

Requirements For Bread Divider Operator:

- Ability to push bread/bun trays

- Ability to lift 15lbs repetitively

- Ability to occasionally lift or push 50lbs

- Ability to operate hoist to help

- Ability to bend, kneel, and stoop as needed
